Reading through the KB and Forums, I've been able to piece together how Record and Field level permissions work, and looking for confirmation.
To limit what a user sees, we need to:
1. Create a View which holds the Records and Fields the user is allowed to see.
2. Create a Role specific to that View
3. Add the User to that Role
4. Create a Form and pair with the View
This seems pretty cumbersome, so not sure if I'm understanding correctly
User > Role > View/Form

You are correct. TrackVia accomplishes limiting record and field permissions through roles. Please let us know if you have any further questions.
